Fancier wood always has at least a psychological positive factor on tone. In reality, the figure of the wood may or may not be correlated to tone. In general, darker versions of some of the common woods MAY be a little more lush but not guaranteed.

Sitka is a great wood. The key with all woods is the tonal quality. There is a ton of sitka out there and most of it is good. There is some out there though that is superior.

Not to bring up another guitar brand but Martin uses different grades of sitka on their guitars from their entry level all ...

Congrats on your Collings acoustic guitar. It is a fine one!

Materials, design, build, and tuning are all factors that will affect the voice and playability of an acoustic guitar. Collings of course is one of the premier builders so their combos are near the top of the food chain.

The video uses too much processing. A clean recording would show the somewhat subtle differences though. The laminate damps just a little of certain frequencies (mostly highs). This give a smoother, darker sound than the solid version.
