Fancier wood always has at least a psychological positive factor on tone. In reality, the figure of the wood may or may not be correlated to tone. In general, darker versions of some of the common woods MAY be a little more lush but not guaranteed.

Sitka is a great wood. The key with all woods is the tonal quality. There is a ton of sitka out there and most of it is good. There is some out there though that is superior. The video uses too much processing. A clean recording would show the somewhat subtle differences though. The laminate damps just a little of certain frequencies (mostly highs).
