Backwood question - Custom OM with Old Growth Sitka

Hi All,
I am having a custom OM being made with the Old Growth Sitka option. Currently, I have IRW selected as the backwood option, but cocobolo is available. Does anyone have experience with cocobolo on a Collings? Mark at Collings doesn't recommend it for OM size, and prefers it for larger guitars, but I have seen a ton of OM sized guitars with cocobolo.
Any thoughts on OG Sitka and Cocobolo?
