V, if you're being troubled by trigger finger & arthritis, the 000 may not be the best choice.
They come stock with a 1 13/16" nut width... which is pretty hefty...& long scale.
See if you can find an OM1JL.... the standard one comes in 1 11/16" with the same profile as Julian's '39 000-18.

Red, Tyler makes great pickguards, but there's really no need to change the pickguard when the adhesive can be easily replaced.

As i recall from my visit to Collings in Nov and talking with Nully & Steve....tops are not torrified. The generally accepted line of thought in Austin is that no one really knows how torrified tops will age.

Easy enough to remove the guard and clean it....replace the adhesive w a new sheet of 3M adhesive.

Yes, I believe cutaways are a less-desired feature. There are less of them and fewer people who would be looking for a guitar with a cutaway.
